Oven Broiled Whole Zucchini |
PLEASE DON'T JUDGE THIS DISH BY THE PICTURE!! I know what you're thinking and NO it wasn't a waste of three zucchini. Visually these zucchini are not going to win any prizes but once you take your first bite. You'll be a believer.
I love zucchini and cook it all the time and have always cut them into my desired shapes before cooking. So when an internet search suggested cooking zucchini whole I was doubtful but very curious. I'm grateful my curiosity out weighed my doubt because these are fantastic!
No more soggy or watery zucchini. Hands down this is the absolute best way to cook zucchini. The exterior gets lightly charred and the interior is creamy and buttery (not from butter but the cooking). Once they are cooked you can cut them into any shape you desire and season them a lot or a little with your favorite oils, butter, herbs or cheese. They would also be a great addition to a salad.
I buttered my zucchini like I would corn on the cob and sprinkled them with salt and pepper. They really didn't need anything more.
Oven Broiled Whole Zucchini
- Place oven rack about 6 inches below the heating element.
- Preheat broiler for 5 - 10 minutes.
- Wash and dry whole zucchini's
- Place them on a broiler pan.
- Broil for about 10 - 15 minutes (depending on the size), turning the zucchini about every 3 minutes or as needed to evenly lightly char and blister the skin.
- When they are cooked brush them with butter or olive oil and sprinkle with salt and pepper.
