Grandma Helen’s White Takuwan

This simple pickled turnip takes very little to make and can be enjoyed the very next day.

All it needs is 3 pantry ingredients; Sugar, Kosher Salt and White Vinegar.

The flavor is clean and crisp and will keep fresh in the fridge for at least a month or more.

I have a chart below for different amounts. I usually make only 1 quart at a time which is the perfect amount for my husband and I.

Grandma Helen’s White Takuwan

Makes about

3 quarts

2 quarts

1 quart

Japanese Daikon

about 10-12” long

Sugar

1 1/2 cups

3/4 cup

6 Tbsp.

Kosher Salt

 

3 Tbs.

4 1/2 tsp.

2 1/4 tsp.

White Vinegar

 

3/4 cup

6 Tbsp.

3 Tbsp.

 
  • Peel daikon, cut off tip ends and discard. Slice into 1/8 to 1/4 inch thick circles. Place in a glass jar or air tight container.
  • Mix sugar, kosher salt and white vinegar together until completely dissolved and pour over daikon slices.
  • Keep in the fridge.
  • This will be ready to enjoy the next day.
