Filipino stir fry noodles were a treat when I was a kid. The only time I would get to eat them was when they would show up at a potluck. They always arrived in a huge disposable aluminum roasting pan loaded with chicken, pork, shrimp and hard boiled egg halves that encircled the noodles. I couldn't get enough of them. It was time to figure out how to remake this dish from my childhood.

Growing up I could only get Oyakodonburi on special occasions like when my family would eat out at a neighborhood Japanese restaurant. I would get teased for ordering something so simple when there were so many other options. But I didn’t care, it was my favorite.

Chicken Paprikash or Paprika Chicken

Chicken Paprikash or Paprika Chicken
When I Googled, How many chicken paprikash recipes are on the internet? I was shocked to discover that there are over 4 million and only a little over 1 million for beef stew recipes. Really? This fact goaded me to do more research on this simple one pot Hungarian comfort dish. No, I didn’t read all 4 million recipes, but I did read quite a few.

Which got me thinking, if over 4 million people felt the need to share their recipes, I was certain that I needed to add it to my recipe collection. It doesn’t matter what you call it - Chicken Paprikash or Paprika Chicken, it’s delicious and easy.

Chicken Long Rice

I’m not really sure why they call this dish “Long Rice” when it isn’t made with rice noodles.  Chicken long rice is made with bean threads (mung beans to be exact) that cook up clear and are extremely slippery.  Its still a mystery as to how to properly pick up these noodles without tossing all your manners out the window.  They slip and slide off your fork faster than you can get it to your mouth.  Its quite the challenge, but worth it.  So don’t confuse these noodles with rice noodles which are commonly used for pad thai.  They are completely different and are not a good substitute for this dish.

Rosemary Roasted Chicken

I have been cooking with whole chickens lately because they are delicious.  But to be perfectly honest it’s because they were on sale for the amazing price of .88 a pound (absolutely unheard of these days).  So I bought 6.  Yeah, it may seem a bit excessive but I just can’t resist a good buy (at least when it comes to food).  One for dinner and the rest went into my freezer.  Believe it or not, there is only one lonely chicken left.  All alone just chilling… now I wish I bought more.

Hawaiian Style Shoyu Chicken

Everyone in Hawaii has their own family recipe for shoyu chicken.  My recipe has a Chinese twist with the addition of star anise giving the sauce a gentle hint of licorice, if you are not a fan of licorice, which I am not, don’t be afraid to add this layer of flavor. One little star anise wakes up the sauce in a way that no other spice can.

Baked Chicken with Roasted Tomato Sauce

My husband loves the clean fresh flavor of simple tomato sauce that can stand alone and he is definitely going to love this sauce.

Oven roasted tomatoes simply flavored with garlic, olive oil, salt and pepper is the “Mother Sauce”.  Once you make the sauce you can add other ingredients to wake it up.  But it is excellent in its most virgin form.

Korma Chicken

PRINT RECIPEKorma chicken is a mild Indian chicken curry that is finished with yogurt. If you want your dish to be a bit more spicy add hot chili powder (carefully) instead of mild. The hot chili powder will fire it up with about ¼ the amount as called for. Remember you can always add but you can’t take it out. This dish usually has finely minced blanched almonds and cilantro in it. But my husband doesn’t care for either. So feel free to add them when you make this dish. Another nice addition would be a cinnamon stick.
