Box Brownies with Cream Cheese

Box brownies are one of the few things that will get my youngest daughter in to the kitchen to cook/bake.  She will make them alone or with a friend, always feeling satisfied with her creation.

Lindsey loves the edges and her best friend loves the center so they make a great pair.  I always have a six pack of brownie mix in my pantry that I pick up at Costco.  You just never know when you will need a quick batch of brownies…

This was a rich combination that was a nice twist on the same ole, same ole brownie, simple to put together and possibly Lindsey’s new reason to come into the kitchen, she loved them.

BOX BROWNIES WITH CREAM CHEESE
(adapted from the Philadelphia cream cheese cookbook)

1          package          brownie mix
1          8 oz.                cream cheese, softened
1/3       cup                  sugar
1          large                egg
1          tsp.                  vanilla

Prepare brownie mix as directed on the package.  Pour into a greased 8 X 8” square pan.

Beat the cream cheese with an electric mixer on medium until smooth and creamy.  Mix in sugar until blended.  Add egg and vanilla; mix until just blended.

Pour cream cheese mixture over brownie batter and spread to even out.

Cut through the batter several times for a marble effect.

Bake in a 325 degree oven for 1 hour.
