I had El Pollo Loco chicken on my mind which led me down a rabbit hole of copycat recipes. All of the recipes had similar ingredients of which I did not have on hand. So I decided to wing it with my lonely lime and to my surprise it produced a very tasty chicken.
With that said - This is not El Pollo Loco chicken. It's just delicious lime marinated smoky grilled chicken that is worth sharing.

If you want to learn how to spatchcock or split a chicken watch this video - Spatchcock chicken . It truly is the best way to cook a whole chicken evenly without drying out the breast meat. In the oven or on the grill.
No real recipe needed for this chicken - just a play by play
- Spatchcock a whole chicken (watch video above) or use parts.
- Rub minced garlic over the whole chicken and sprinkle with black pepper.
- Generously season the chicken with Kosher salt.
- Squeeze the juice of a whole lime over the chicken.
- Let marinate for at least 30 min./preferably 45 min. to an hour. But no more than 2 hours or your chicken meat will get mushy from the lime.
- Drizzle oil over chicken before grilling
- Place the chicken skin side down to char the skin. Flip chicken over and let cook over medium-low heat with the cover on for about 45 min. to an hour. Flipping about every 10-15 min. (I cooked this on my gas grill)

Fresh Lime Juice or a combination of (lime, orange and pineapple)
Oil (drizzle over chicken before placing on the grill)
Oregano (optional) I didn't use it this time, but it would work well
