There’s no middle ground, you are either a
fan of sauerkraut or you’re not! Due to the fact that I’m posting this recipe
clarifies that I’m a fan. I really love this stuff and am constantly looking
for more ways to enjoy it.
This delicious sauerkraut is well balanced and
matches perfectly with grilled, pan fried or oven roasted brats. Actually it
goes well with any sausage for that matter. I even fork it out of the container
straight from the fridge for a quick snack. Ok that’s a bit excessive, but life
happens.
In my opinion, not all sauerkraut's are equal.
I pay more for the refrigerated version and it makes all the difference
especially when you are eating it straight up, on a dog or stuffed into a Ruben.
Take the time to caramelize the onions (about 20 min.) it will make all the difference! |
My notes to you…
· I’m aware that not everyone has bacon fat
sitting in their fridge. For those of you who don’t, just use cooking oil, it
will still be delicious. However, if you happen to be blessed with some
rendered fat or a couple of strips of bacon - it will add another layer of
deliciousness to this already delicious kraut.
· The other thing is the option of water or
beer. Water works fine. However, beer kicks it up a notch. So, if you are using
water (still a good choice) add only 1 cup. If you are adding your favorite
beer, you can add the whole bottle.
· I always make 2 pounds at a time. But this
recipe can easily be cut in half.
· You don’t have to remove the skin on the
apple, only the core and seeds.
Delicious Sauerkraut
2 pounds sauerkraut, rinsed and
drained
1 large onion, chopped small
1 large fuji apple or similar sweet
apple, chopped small
1 tsp. sugar
1 tsp. kosher salt
¼ tsp. black pepper
1 cup water or beer
1 – 2 Tbsp. bacon fat or oil
2 slices bacon, cut small (optional)
Cook onions in the bacon fat or oil over
medium heat until soft and caramelized (about 20 min.) Stir occasionally.
Add apples, sugar, salt and pepper. Cook for
5 min. Stir occasionally.
Add sauerkraut and beer or water. Cook for 10
min. Stir occasionally.
