Chicken Breast Stir Fry

Stir frys are quick and easy.  The hardest part is cutting up the ingredients.  The good news is that these days, you can buy pre-cut vegetables for just about anything and when it comes to stir fry, there are no hard rules as to what goes in the wok.  So pick and use as little or as many vegetables as you desire.

Korean Blanched Spinach

Korean restaurants always bring out an assortment of yummy sides to go along with the meal, but at home it’s usually just a dish of kim chee. Tonight I am serving up a small assortment of side dishes, blanched spinach, fried tofu and of course kimchi.

This simple spinach dish was absolutely delish and made me feel as if I were eating a dish that was truly authentic.

Easy Eggplant with Lemon and Parmesan

Eggplant is one of those vegetables that you either love or you don’t.  There is no middle ground when it comes to eggplant.  I’m one of those that love eggplant and am always looking for new ways to prepare it.  The quickest and easiest way that I discovered is to pan fry the eggplant with mayonnaise.  I know you are thinking “Mayonnaise”? But trust me on this one.  The mayonnaise works magically without making them greasy.  It makes sense, mayonnaise is simply a mixture of oil and eggs.

Green Beans & More


Fresh green beans make for a wonderful side dish simply steamed with salt and pepper.

For a jazzed up version add a few basic ingredients and you will have a versatile side dish that can accompany any meal. I blended the flavors of onions, garlic, red pepper and tomatoes with the green beans to keep the flavors light and fresh. Mushrooms would have been a great addition as well but I didn't have any when putting this dish together.

Turtle Salad with Raspberry Vinaigrette

No, I don’t put turtle in this salad.
I got this salad idea from a local restaurant named “Turtles”. They take a basic bowl of chopped lettuce and top it with corn, beans, olives, beets, onions and tomatoes. It is so simple, yet, surprisingly satisfying. The combination makes for a delicious well balanced salad that is high in protein and fiber rich, all pulled together with a raspberry vinaigrette.

Saigon Salad with Lemongrass Chicken

This salad is a combination of thinly sliced vegetables that give it a light and crispy texture. You should choose all or some from the list below to make it to your liking and toss it together with your desired amount of dressing. The dressing is both lightly sweet and lightly spicy at the same time. Dress the salad with less than you think you would like, taste it, then adjust. Remember you can always add. But you can’t remove it once you add it.
