Shortbread Pumpkin Squares
No more pumpkin pies for me. I'm hooked on the squares! And the best part is that it's easier than pies. I guess you could say that these are simply delicious :)
I like to place the squares into cupcake liners to dress them up. It also make them easier to pick up and eat when it's in its own little wrapper. These delicious squares are best when they are cold.

Layered Pumpkin Custard Pie 2012
Putting these two pies together in layers is genius. It's hard to explain what goes on in your mouth when you bite into this pie. It's completely different than taking a bite of a pumpkin pie and then a bite of custard pie at the same time. Layering changes things, the custard gives the pie a light mouth feel and the pumpkin is where the flavor is.

When I decided to make this recipe from Liz at “ThatSkinny Chick Can Bake” I envisioned a chewy-dense blondie brownie with bits of
apples. It took me by surprise when I
cut into the brownies and discovered something completely different. Instead of a brownie I ended up with an extremely
moist apple spice cake. Clearly this wasn’t
what I was expecting, but it turned out to be a good thing.

Buttermilk Pancakes
Kono makes the best pancakes! They are light and fluffy with crispy edges. Yummmmm

Rustic Peach Tart

My inspiration was a rustic apple tart that I saw on the Food Network show "The Best Thing I Ever Ate". My husband loves pies of any type and peaches more than apples - so I changed up the recipe a bit.
The final product was delicious. It had a light crispy crust with a dense peach filling that wasn't too sweet. This was the easiest fruit pie that I have ever made, a definite keeper.
