Baked Chicken Adobo
Filipino adobo is a simple blend of tangy vinegar, salty soy sauce and a punch of garlic, with a touch of S&P, a bay leaf and a bit of waiting time. That’s all it takes to make this easy pantry ready meal that always gets great reviews. When I say I’m making adobo, my family always gets excited which I find interesting, considering how basic it is.

Whole Butterflied Roasted Chicken

My friend Dave sent me a link to a fantastic web page that described how NOT to roast chicken. The big question was, to brine or not to brine. I am a firm believer in butterflying the chicken so that part was a no brainer.

Chicken King Thing aka Creamed Chicken

T.M.I..............I had a crazy day at work and needed to get dinner together quick. I usually bring out my gigantic 3 ring binder with all my recipes and notes (huge mess) and all I really needed was to reference how long to cook my chicken breast and at what temp. So did I really need to pull out my binder?
Not anymore (at least for tonight). Instead I logged on to my blog and wrote in the search box Simple Roast Chicken and there it was. Instant information in a well organized format.
It was way cool!!! When I started this blog I didn't realize that I would be using it in this way.

Chinese Mushroom Chicken

This recipe was requested by my friend Connie in Hawaii. When she asked for it I couldn’t remember how to make it. I mentioned it to my husband and he said that he would love to eat it. So I stirred up my memory and this is what I came up with. I learned how to make this dish when I was about 12 years old from Pui Lee who taught me a lot in the kitchen of Jack’s.

Last night I made Chinese Ginger Chicken for Dave. I wish he was here to enjoy it. He sent me an article that had many cooks making it up in their own style. So I took what I call Chinese Steamed Chicken (a recipe that I got from my mother-in-law) which is my husband’s favorite and he likes it simply served with oyster sauce on the side for dipping and turned it into ginger chicken. It was wonderful.
