Toffee Oatmeal Cookies

Words from a true Cookie Monster...

Light crispy edges with a delicate crunch and a soft gooey center. The toffee pieces are the perfect size so you get at least one piece in every bite and the buttery finish lingers in your mouth making you want another bite.

My husband actually said those words as he walked out the door with a stack of cookies on a napkin.

These cookies got rave reviews from my family and friends and now I would like to share them with you.

Shortbread Pumpkin Squares


No more pumpkin pies for me.  I'm hooked on the squares! And the best part is that it's easier than pies. I guess you could say that these are simply delicious :)

I like to place the squares into cupcake liners to dress them up.  It also make them easier to pick up and eat when it's in its own little wrapper. These delicious squares are best when they are cold.

Copycat Double Tree "Chocolate Chip Cookies"


I discovered this recipe for Double Tree Hotels "Chocolate Chip Cookies" at Iowa Girl Eats blog.  

I have never experienced the hospitality of a Double Tree Hotel or their notable cookies.  So it wasn’t a stroll down memory lane that got me mixing up a batch of these cookies.  

It was the 3 not-so-ordinary chocolate chip cookie ingredients that caught my attention, especially grinding the oats into flour.  Oatmeal is always a plus and sneaking them in your cookies unnoticed was a good idea to me.

Grisbi "Lemon & Ginseng Cream" Cookies

I don't usually buy or encourage others to indulge in store bought cookies because they are usually disappointing. 

My opinion has officially changed, at least for one cookie, and that cookie is the Grisbi “Lemon & Ginseng Cream” cookie.

O.C.C. Cookies

What are O.C.C. cookies? 

They are simply Oatmeal, Coconut and Chocolate Chip cookies that have no connection to Orange County California.  The oatmeal gives the cookie body, the coconut chew, and the chocolate chips don’t need any explanation.

Chewy Gooey Oatmeal Cookies

What do you get or do for someone who has everything and needs nothing? Send them a little love in a box. So this morning I woke up extra early to bake up these cookies for my mother in law who has a birthday coming up. When she last visited she asked me for an oatmeal cookie recipe so I decided to make these up for her along with the recipe and send them to her.
