Cottage Cheese Meatloaf

I had gathered all the ingredients to make a meatloaf when I saw the container of cottage cheese in the fridge (that I had intended for something else) and skeptically did a google search to see if anyone else thought that meatloaf and cottage cheese might go together. I quickly discovered that I was not as crazy as I thought.

Grated Potato Meatloaf

I’m calling this a grated meatloaf.

Why? Because I usually chop the onions and garlic and sauté them until they are soft, then add them to my meatloaf. Tonight I had a lone medium sized russet potato on my counter and decided to add it to my meatloaf instead of bread crumbs.

Bacon Lovers Meatloaf

My daughter and I were watching a movie and they were making sarcastic remarks about meatloaf.  She turned to me and said, “What’s wrong with meatloaf?  I love meatloaf! Ha, ha.  I don’t get it either.  Meatloaf is always a crowd pleaser at my house and never gets boring because it can be changed up in so many ways.

Teriyaki Meatloaf

A while back when I was at the butcher counter the person helping me told me that the ground beef that was on sale was the best that they had because it was made up of the butchers trim for that day. That meant that it was the freshest and also had some great cuts of meats (prime rib, tenderloin, chuck and I’m sure everything else that they trimmed that day) blended in to the mix. So I always walk past the butcher counter at my grocer to see if the “special” ground beef is on sale. If it is I will buy an extra pack or two for my freezer and have the butcher pack it to the weight I will need at a later date. So I usually ask for a 3 ½ pounder for a meatloaf, and a 2 pounder for hamburger steak or meatballs and a 1 pounder for the all purpose quick meal.
