Kapiolani Coffee Shop Oxtail Soup

My husband loves the ox tail soup at Kapiolani Coffee Shop in Aiea, Hawaii and only gets to eat it when he is visiting his dad. On his last visit he asked me if I could recreate it. After a few tries, he gave me the thumbs up. This is my version of the Kapiolani Coffee Shop Ox Tail Soup.

Easy Brown Gravy

Easy Brown Gravy
The best gravy is created with pan drippings, crispy bits of flavor packed fond and homemade stock. 

You know what I'm talking about.  The kind of gravy that you mistake as soup and find yourself spooning one scoop after another straight into your mouth, reassuring yourself that you are just tasting as you wipe the drips off your chin. Yeah, that kind of gravy!

You pull out your easy brown gravy recipe that has saved that mound of ground beef or that lonely pork chop many of times from boredom.

I’m a huge fan of clear broth soups and this has quickly moved up the list as one of my favorites. It’s easy to make and incredibly satisfying.

A few bones and an abundance of fresh vegetables transform into a soup that is a meal in itself and screams for a repeat as soon as the pot is empty. That's the kind of soup that I need to have cooking in my kitchen!

My husband can’t just grill Santa Maria Tri-Tip. He needs to grill it on his (Got to Have it) Santa Maria Style Grill. You know… the one that is made of iron and has a hand crank feature that lifts and lowers the grill over the coals. Yup, it was a dream come true when he wheeled that baby into our back yard and introduced it to the rest of the gang. I’m not gonna lie, I think his Webers (yes, that is a plural) and Traeger are a bit jelly, but never neglected.

Kono's Exceptional Prime Rib

Prime Rib has been our Christmas dinner tradition for as far back as I can remember.  When it is cooked perfectly it is euphoric. When it's not - it's simply roast beef.

Every year my husband and I ask each other: How should we cook the rib this year?  The answer is always different.  Sometimes it's as simple as, just like we did last year and other times it's a new method.  It's always a mystery. Let me just say... If it has been suggested,  I'm sure we have attempted it.

Low Carb - Beef Vegetable Soup

I just got back from walking the dog and all I can say is...“It’s freaking cold outside”.  My face and hands are frozen through to the bone - Burrrrrrrrrrrrr.  I needed something to warm me up from the inside out.

I had planned on making a Pot Roast with the chuck that I had in the fridge, but when I got back from my walk, soup sounded a lot better.  So the pot roast got the axe and a big pot of beef vegetable soup moved in.

What the heck is flat iron steak and how do you cook it?  That’s what I asked myself the first time I saw it at the meat counter, which made me wonder… Why didn’t the cows have this part when I was growing up?  It was time to find out more about this new found cut.

Damn Good Meatballs


These are damn good meatballs!!!

Those are the words that came out of my mouth after biting into these meatballs and that's how they got their name.

In my opinion a meatball should be tender and juicy. They should hold their shape while being delicate at the same time, and of course, be packed with flavor. That's what you can expect with these Damn Good Meatballs.

Korean Beef Bulgogi

Korean style BBQ beef (Bulgogi) is very easy to make and has a wonderful balance of sweet and savory .  I got this recipe from my father in law about 25 years ago and have not made any changes to it, because its just that good.  Irresistible tender thin slices of beef rib-eye marinated in a garlicky soy sauce.  Once you have tried this dish you will become an instant fan.

Colin's Awesomely Easy Pot Roast



This is my nephew Colin’s Awesomely Easy Pot Roast recipe and it is everything that the name states. The one thing that is left out of the name is that it is also “delicious”. Beef Barley Vegetable Soup



The winter chill has arrived and I was hungry for a brothy soup that was more like a meal rather than a starter.  I had about 1 ½ pounds of leftover pot roast in the fridge so I decided to use it as my base. 

Beef barley soup seemed like the optimal choice, a hearty vegetable soup with a beefy background and the bonus of barley which is known for its high fiber content (bonus) and adds a deliciously chewy touch to this soup.
