Lime Marinated Grilled Chicken

I had El Pollo Loco chicken on my mind which led me down a rabbit hole of copycat recipes. All of the recipes had similar ingredients of which I did not have on hand. So I decided to wing it with my lonely lime and to my surprise it produced a very tasty chicken.

With that said - This is not El Pollo Loco chicken. It's just delicious lime marinated smoky grilled chicken that is worth sharing.

Delicious Sauerkraut

There’s no middle ground, you are either a fan of sauerkraut or you’re not! Due to the fact that I’m posting this recipe clarifies that I’m a fan. I really love this stuff and am constantly looking for more ways to enjoy it.

Kono’s Santa Maria Tri-Tip

Kono's Santa Maria Tri-Tip
My husband can’t just grill Santa Maria Tri-Tip. He needs to grill it on his (Got to Have it) Santa Maria Style Grill. You know… the one that is made of iron and has a hand crank feature that lifts and lowers the grill over the coals. Yup, it was a dream come true when he wheeled that baby into our back yard and introduced it to the rest of the gang. I’m not gonna lie, I think his Webers (yes, that is a plural) and Traeger are a bit jelly, but never neglected.

Harry's BBQ Chicken

Harry's BBQ Chicken

Who’s Harry? That’s what I asked, when our friend Craig shared this recipe with us.

My husband and his buddy Craig attended college together in upstate New York and their house cook was – you guessed it, Harry. Every year Harry would make this chicken for the annual BBQ and being the sleuth that Craig is, he got Harry to share his recipe, for which we are all grateful.

Alabama White BBQ Sauce

Alabama White BBQ Sauce
Why am I talking BBQ in the dead of winter?  Because we just experienced a string of sunny days which means that my husband will need to fire up his BBQ. Which means, we need to whip up some sauce.

I learn new things everyday and today I'm going to share a recipe that will change the way you think of BBQ sauce.

Balsamic Herb - Flat Iron Steak

I recently posted about my new favorite cut, the Flat Iron Steak. If you don’t like your steak med-rare, this is not your cut of meat.  But if you do, read on…

Flat Iron Steak

I can’t be the only one who has this question.

What the heck is flat iron steak and how do you cook it?  That’s what I asked myself the first time I saw it at the meat counter, which made me wonder… Why didn’t the cows have this part when I was growing up?  It was time to find out more about this new found cut.

Kono's Grilling Steak Butter

My husband Kono is my "Grill Master" and he loves to play with fire.  Evidence of this can be found on our back deck where he keeps his collection of smokers and bbq grills. His BBQ's are not seasonal and as I have stated before, they get fired up rain or shine!

Bacon Hot Sauce - BBQ Chicken

Oink - Oink -Sizzle - Oink... The package showed up last night and I was so excited to check it out.  If you are a fan of bacon and hot sauce, this sauce is a dream come true.

Nice one DK, this was a great find!

Think about it?  Smokey bacon and hot sauce, married together in a convenient package without the fat. Which is stated and sold as Vegetarian, Vegan and Kosher.  Brilliant!  Not that I’m concerned about the V, V and K as much as I’m amazed at the flavor and versatility.

Hawaiian Style Slow Cooker Baked Beans

I make baked beans once a year and it is usually for the first BBQ of the season.  The one thing that defines our family BBQ’s is a big pot of sweet and savory Hawaiian inspired baked beans with Portuguese sausage, better known as Linguica outside of Hawaii.

Mojo Marinated Skirt Steak

The sweet pungent flavor of garlic, spiciness of a serrano chili, along with the clean fresh flavors of lemon, lime and orange juice, along with a handful of cilantro is all it takes to turn a simple piece of meat into a deliciously marvelous meal.

The Last Cheeseburger of the Season

The way that the Oregon weather has been changing from summer to winter and back to fall has been quite puzzling.  Today we had a spectacular summer day that peeked out after several rainy days.  So I decided to fire up the bbq for what might be the last time this season and grill up some burgers.

Albertson's Shrimp

This recipe comes from Jean Watanabe Hee’s cookbook, Hawaii’s Best Local Dishes and is named Mimi’s Shrimp.  My family refers to it as Albertson’s Shrimp.

Buttermilk Cornbread

My daughter Cecily spent a year in Italy and I was fortunate enough to visit her and be hosted by her Italian family who cooked me amazing home cooked meals, an experience that I will never forget.

You are probably wondering “What does this have to do with cornbread?”

Spatchcock Chicken Al Mattone

I discovered the word spatchcock about a month ago and had to look it up.  One of the best and funniest explanations I found was;

Spatchcock chickens are simply whole chickens split down the back and flattened out.

Kono's Smokin BBQ Chicken

Kono is the in house BBQ expert. My job was to watch him do his magic with the chicken and here are my observations that I want to share with you.

Barbecue Chicken in the Oven

My local grocer had bone in chicken breast on sale for $1 a pound. How could I resist?

And yes, I did buy extra to toss in the freezer.

Kal Bi (Korean BBQ Beef Short Ribs)

When my father-in –law retired he took a Korean cooking class and we are all grateful for his ambition. Trust me this is the best Kal Bi recipe you will ever make or eat! The secret is placing the sugar directly on the meat so it can absorb the sweet layer of flavor on it’s own.
