Shortbread Pumpkin Squares
No more pumpkin pies for me. I'm hooked on the squares! And the best part is that it's easier than pies. I guess you could say that these are simply delicious :)
I like to place the squares into cupcake liners to dress them up. It also make them easier to pick up and eat when it's in its own little wrapper. These delicious squares are best when they are cold.

Layered Pumpkin Custard Pie 2012
Putting these two pies together in layers is genius. It's hard to explain what goes on in your mouth when you bite into this pie. It's completely different than taking a bite of a pumpkin pie and then a bite of custard pie at the same time. Layering changes things, the custard gives the pie a light mouth feel and the pumpkin is where the flavor is.

Apple Brownies or Grandma's Easy Apple Cake
When I decided to make this recipe from Liz at “ThatSkinny Chick Can Bake” I envisioned a chewy-dense blondie brownie with bits of
apples. It took me by surprise when I
cut into the brownies and discovered something completely different. Instead of a brownie I ended up with an extremely
moist apple spice cake. Clearly this wasn’t
what I was expecting, but it turned out to be a good thing.

Microwave Chocolate Cake in a Mug
I was so excited to try this cake in a mug recipe. It had tons of promise. The idea of whipping up an almost instant chocolate cake in a coffee mug was fascinating to me. But it didn’t work (at least the first two times). My first attempt, I cooked it for 4 minutes and the second for 3 minutes. Both times the cake came out as hard as a rock. As you can imagine, I was quite disappointed. It was a waste of good ingredients and time. How could someone post such a bad recipe? In the end it was the cooker (me) not the recipe.

Apple Turnovers
I had a couple of honey crisp apples sitting on my counter that were screaming to become dessert, but I wasn't sure what to make. It wasn't enough for a pie or even a small crisp. I hemmed and hawed as I looked in my freezer and spotted a package of puff pastry, that’s when it all came together, I was going to make apple turnovers. Such and easy dessert to make, I don’t know why I don’t make them more often? This was a welcomed decision that got me raves from the family.

Panna Cotta
I have never made panna cotta before or felt the need to learn, until now. My husband who has quite the sweet tooth would usually get his panna cotta fix from Trader Joes. They were conveniently boxed in a two pack, just enough to satisfy, and defrosted beautifully into a light and creamy delight with a blueberry and pineapple topping.

O.C.C. Cookies
What are O.C.C. cookies?
They are simply Oatmeal, Coconut and Chocolate Chip cookies that have no connection to Orange County California. The oatmeal gives the cookie body, the coconut chew, and the chocolate chips don’t need any explanation.

I decided to make mini pies this year thinking at the time that I would make 6 different pies. That was a bit ambitious considering each type of pie had a different baking time and temperature which made it a lot more time consuming than I had thought it would be. The next time I do this I may have to start the day before or at least consider a couple of cream pies that wouldn't need the oven. I did manage to get 4 different pies done before throwing in the towel and handing the oven over to the turkey. Live and learn.
To make 6 - 5' mini pies I needed;
1 double crust recipe (divided into 7)1 pumpkin pie recipe
1 custard pie recipe
and a couple of granny smith apples for the lone roasted apple pie
