Dijon Chicken Satay with Peanut Sauce

This is my favorite go to chicken on a stick recipe. It’s surprisingly flavorful for such few ingredients.
You can either hand mince the ginger and garlic and add it to the rest of the ingredients to make the marinade, or you can place all the ingredients into a blender and mix until the sauce is smooth. If you decide to use the blender, make sure you chunk up your ginger into smaller pieces so it will chop up and blend easier. The garlic can go in to the blender whole.

Then all you have to do is put your chicken in a zip lock bag with the marinade, squish it around to mix and allow it to marinate overnight in the fridge.

Remember to soak your wooden bbq sticks in water the night before so they won’t burn during cooking. I use a 9 X 13 baking pan to soak my sticks.

You can use dark meat chicken for this recipe but I prefer to use white meat chicken. It’s much easier to work with. I usually get boneless skinless breast and cut them into strips. But this time I picked up chicken tenderloins (they look like chicken strips). So no cutting was needed.

DIJON CHICKEN SATAY
1 ½ pounds chicken breast or thighs, cut into strips

MARINADE
1 1/2 tsp. fresh ginger, minced
2 cloves garlic, minced
2 Tblsp. dijon mustard
3 Tblsp. soy sauce
1 Tblsp. lime juice
3 Tblsp. olive oil

Mix ingredients together and marinate the chicken overnight if possible. Slide chicken strips on to the skewers and gently flatten out. Either cook on your bbq or broil in the oven.
Serve with perfect peanut sauce (recipe below)

PERFECT PEANUT SAUCE
This is a magical sauce that can be used as a dip, sauce or dressing.
If you love peanut sauce you will love this sauce. And if you don’t, you will love this sauce. It’s easy to make and the flavors are perfectly balanced. It’s a versatile sauce that goes with everything from chicken, beef, pork or shrimp to raw and cooked vegetables. It’s also wonderful for transforming hot or cold noodles into a wonderful main or side dish.
*If you want a richer sauce, add ¼ cup of coconut milk.

PERFECT PEANUT SAUCE
4 Tblsp. creamy peanut butter
3 Tblsp. soy sauce
3 Tblsp. honey
1 1/2 tsp. fresh ginger, minced
1 clove garlic
1 tsp. red pepper flakes
2 Tblsp. lime juice
¼ cup water

Place all ingredients into a blender and mix until it is completely smooth.
