Chicken Cacciatore

My daughter suggested that I blog about how I turn one meal into another meal, using up the leftovers. This would be one of those meals.
I had half of the roasted chicken leftover from when I made the “Whole Butterflied Roasted Chicken” and decided to turn it into cacciatore, a simple Italian chicken stew. I cooked up the sauce in a large skillet then simmered the chicken pieces in the sauce for about 15 minutes. The roast chicken made for a delicious quick and healthy dinner.
Usually this dish would be made with cut up pieces of whole chicken, lightly dusted with flour and pan fried before simmering it in the sauce. I don’t always flour the chicken. The sauce is plenty thick without that process.

CHICKEN CACCIATORE
3 pound whole chicken, cut into sections
kosher salt
black pepper
flour for dusting (optional)
SAUCE
1 Tbsp. olive oil
1 large onion, chopped
2 cloves garlic, minced
1 large red bell pepper, chopped
1 tsp. kosher salt
¼ tsp. black pepper
¼ cup white wine
½ cup water
1 28oz. can Italian crushed tomatoes (if you don’t get the Italian add 1 tsp. oregano and ½ tsp. sugar)
2 tsp. capers, drained
Season the chicken pieces with salt and pepper. Lightly flour and shake off excess (optional).
Heat a large skillet on med-high. Add 2 – 3 Tbsp. olive oil and brown chicken pieces on both sides and remove chicken pieces as they brown and set aside. Wipe out the oil from the skillet and return to the stove.

Heat the skillet on med, add 1 Tbsp. olive oil and sauté onions for a couple of minutes. Add the garlic, bell pepper, salt & pepper; let cook until onions are soft.
Add the wine; let cook for a couple of minutes.
Add the rest of the ingredients and bring to a boil.
Add chicken pieces, cover and lower heat.
Simmer for 35 - 40 minutes or until chicken is cooked through.
