Yam & Mandarin Orange Bake

Every year I try something new with my yams from plain to over dressed.  This year I decided to find the middle and it worked out well.
The simple flavor of sweet creamy yams complimented by the addition of mandarin oranges
gave the dish just the right amount of sweetness to enhance the turkey feed and keep it on the main table rather than pushing it over to the dessert table.

I will definitely make this again next year.

YAM AND MANDARINE ORANGE BAKE
2          med                 yams
1          11 oz. can       mandarin oranges, drained
2          Tbsp.               brown sugar
¼         tsp.                  kosher salt

Place the yams in a pot and cover with water.  Bring to a boil and cook for 20 minutes.

Peel yams and dice.  Place in a bowl and add the rest of the ingredients and toss to mix.

Place in an oven proof dish and bake in a 350 degree oven uncovered for 30 minutes.
