Herb Roasted Chicken

This is my version of what I saw in Nice, France. The French have rotisserie chickens cooking in stainless steel cabinets on the sidewalks everywhere and especially in front of grocery stores with a pan of cut up potatoes under the chickens catching and cooking in the chicken drippings at the bottom of the cabinet. The chicken is flavored simply with the cooking style being the star.

Fettuccine and Meatballs

No, this is not a gourmet’s delight but it sure does sub well in a pinch.
Tonight I tossed together a fast pasta dinner. I always keep a couple of bottles of ready made pasta sauce in my cupboard that can quickly become dinner. It seems to be the theme these days. A full and busy day followed up with a fast ready made starter and “viola”, a delicious and satisfying dinner.

Crispix Cereal Mix

Our nephew Jared from California stopped by for a visit and brought us a bag of his mom’s homemade Crispix cereal mix. The cereal was lightly coated with a simple mixture of honey & butter and tossed with nuts and cranberries. It was sweet but not too sweet with a buttery finish that blended well with the tart cranberries. Its one of those snacks that you start off with a handful and find yourself going back for another.
Diane shared the recipe with a bit of advice.

Korma Chicken

PRINT RECIPEKorma chicken is a mild Indian chicken curry that is finished with yogurt. If you want your dish to be a bit more spicy add hot chili powder (carefully) instead of mild. The hot chili powder will fire it up with about ¼ the amount as called for. Remember you can always add but you can’t take it out. This dish usually has finely minced blanched almonds and cilantro in it. But my husband doesn’t care for either. So feel free to add them when you make this dish. Another nice addition would be a cinnamon stick.

Easy Green Chile Chicken


I needed a quick dinner that was hearty and satisfying, which got me thinking about my favorite breakfast burrito-filled with chile verde (a slow cooked pork stewed in a tomatillo sauce), potatoes and cheese.  Yummers!!!
