The easiest way to peel ginger is with the side of a spoon. Simply scrape in a downward motion with the side of a spoon. You will be amazed at how easy the skin comes off without any waste.
I store my fresh ginger in a clean dry paper towel in my vegetable bin to keep it fresh longer.
Ginger also freezes well. If I know I won’t be using my ginger before it spoils. I clean and slice the ginger and place it in a zip bag and store in my freezer. The texture changes but the flavor remains the same. Use it as you would fresh ginger.
